چکیده

Honey is a complex and variable mixture that contains more than 180 biochemical compounds from various molecule families. This obtained after processing the nectar out of plant food sources at level bee abdomen. The bioactive components found in this natural product are charge its antimicrobial properties. used for antibacterial actions against Gram-positive (Gram+) Gram-negative (Gram–) bacteria, anti-fungal antimycotic moulds yeasts, along with protozoal antiviral activities. literature review outlines potential honey; it explains factors responsible spells their mechanisms action. Osmotic pressure, water activity, acid content honey, presence like hydrogen peroxide (H2O2), phenolic acids, flavonoids, methylglyoxal (MGO), defensin-1, lysozyme, volatile as well products secreted lactic bacteria behind activity. basically depends on biological activities initially harvested floral source, geographical origin, season, storage conditions, honey age, health colonies suitable beekeeping practices.
